A bunch of useless crap

As I will be home over the weekend I made a grocery run to pick up enough supplies to last a couple of days.  I should say that I never cook from any recipes, I just kind of make things up as I go along. While shopping I had an idea for a chili mac sort of thing and picked up the ingredients for same.

It's on the stove now and is smelling pretty good. Basically I just browned some lean ground beef with onions, diced red and green bell peppers, diced onion, and a dash of chili powder and red pepper. At the same time I cooked some elbow macaroni.

After draining the macaroni I dumped the beef into the pot along with a large can of tomato sauce, a finely diced  tomato,more chili powder, red pepper, cumin, a dash of garlic salt, and some oregano. I added enough water to make the mixture properly liquid for simmering.

I should have picked up some beans for this but didn't think about it at the time. That would make it even better.

 

I'm hungry.

Sounds good! I don't usually eat ground beef, but chili smells sooo good when it's cooking!

Yep, it sure does. This turned out pretty good. Maybe just a tad too much cumin, but otherwise quite tasty.

Ooh, that sounds good.  I can make that with the organic ground beef and penne for Ock and with beans and rice-corn penne for me.  I know what's for dinner tomorrow night. Yum!

I love chili mac. Too bad there's no place that sells it here. When I do make it I usually just make it for one since ppl in this town think "putting chili over spaghetti is stupid".

I made chilimac for dinner tonight!  It was absolutely yum-o! (as Rachael Ray would say)  Ock isn't much of a pasta person but he does like the fresh tortelini and ravioli here in Naples.  I made his with spinach and cheese tortelini and topped it with a handfull of shredded organic white cheddar.  He was digging it!   He also isn't a fan of "visible" onions, garlic and any other stray vegetable that may make it into the chili but he likes the flavor.  I remedied that by blending the chopped onion, fresh garlic, and tomato sauce.  It did the trick.  All the flavor and no bits.
My chili mac went over a bit of corn-rice penne and mixed veggies (broccoli, carrot, snap peas, water chestnuts, and mushrooms).  I have never been a fan of gluten-free pastas but the Italians know how to make it.  It tasted and had the bite feel of good semolina pasta. The tummy is full and I'm off to study some parasitology.

I put chili over spaghetti often. It's quite good.

I ate the rest of what I made for lunch today. After sitting in the fridge over night the spices really blended well. It was better than the fist time.

My hubby is a no recipe cooker too.  Sometimes what he makes is really scary looking, but I have to say it's usually tasty.  I really like your chili mac non-recipe, it sounds easy and good.

I did read once somewhere the unless it is something really finicky, most recipes can just be used as a guideline or as a baseline to make something really great.

OH! my ex used to LOVE to do that, he said I should try to get a patent on my recipe for chili and use it for spagetti sauce!

Now that I've read Mason's recipe, I gotta try it!

Isn't the "forgetting" of baking powder in chocolate cake the evolutionary predecessor to brownies? Hmmm...


hehe, i baked my mom's chocolate cake recipe onetime and it said to cream the sugar and shortening, so I added a whole pint of Half & Half! Brownies it was! course i was only 12....so...

I love chilimac, but always cook the macaroni seperate and serve the chili over it, mixing as its served.

That's the only way to do it. I like sprinkling cayenne pepper on it, too.

Hey, Mason can you guess what I had for supper last night? Looks like you inspired quite a few in here.

My Papa calls that Cincinnati Chili. There's also a bit o'cinnamon, allspice and cocoa in it. Sounds strange but it is really good! You top it with beans, or onions, or cheese, or all of the above. If you're from the area you would order it as such:

Two-Way Chili: Chili served on spaghetti
Three-Way Chili: Add shredded Cheddar cheese
Four-Way Chili: Add chopped onions
Five-Way Chili: Add kidney beans

Hey Saxy, is your papa from Cincinnati? I like mine five-way. Gold Star chili mac sucks. Skyline is better. But mine is the best.

Not really but it's kinda like mom's cooking. You grew up on it so you think it's the best.
